I have been cooking since I was 14, and
stopped over-using salt in 1979 after seeing a story
on TV about the fact that North Americans use 20
times the salt required!
Salt is a matter of taste.
Period.
It does not matter how many "Chefs" say
add salt at every stage in cooking, add salt before,
add it after.... etc. etc. they USE TOO MUCH
salt!
I add salt to taste as it is served and
let my guests do the same.
Even in baking I often reduce the amount
because recipes specify too much salt.
