Canadian Bacon
I do not know the origin of this but to all of you Americans - there is no such thing as "Canadian Bacon". At least not as in the small ham you call "Canadian Bacon". Certainly not in Canada. It is, as far as I can tell, a product of the American market place only.
In Canada we have "Back Bacon". This is, if anything is, a "Canadian Bacon" except it is not bacon and it is NOT a ham which it does more closely resemble than it does bacon.
Back Bacon or Pealmeal Back Bacon is similar to ham but, and this is important, it has a cornmeal coating and it is looser in texture. Which is why unfortunately I have not had real Back Bacon in quite a while as the only thing we can get now is vacuumed packed and that packs it together tightly like a ham. Back Bacon is also, I believe, processed and/or spiced differently than ham. These differences may not seem like much but they are. Real Pealmeal Back Bacon is very different in taste and texture to ham.
